I've shaved the head .010 for flatness, and i'm thinking of getting a thinner head gasket. Will I need rocker arm shims for just this?
I haven't decked the block, and have stock valves. Only changes are the shaved head and possible MLS gasket.
What's the limit?

You should be OK without shimming the rockers. I'd say a total increase of 0.030" in lifter preload should prompt you to use the same thickness shims and you haven't gone that far.
