don't have a stroker, but need tuning advice

Have a decent amount of mods, so the power is up a bit from stock. I put in the ford 19 pounders and appropriate fpr and the vehicle is running rich, so rich it sometimes backfires out exhaust. Can I tune it right with just a adjustable fpr and map adjuster, plus when I get around to installing head and cam and bigger injectors, can I just tune that with map adjuster and adjustable fpr? Also does anyone know how much hp stock fuel pump is good for? Also next summer I will probably go the stroker route and am curious if stock fuel pump is sufficient and if I can tune with just adjustable fpr and map adjuster, no one on cherokee forum's seems to have any advice when it comes to tuning.
